A great dish to serve with seafood, risotto nero gets its name from the black color the rice aquires when cooked with its signature ingredient, squid ink.

This mayonnaise is also great with grilled fish or prawns!

The mountain pepper in this recipe adds a gentle heat and an interesting flavour that goes well with the creamy parmesan sauce. The sauce can be used to go with any pasta as a starter, or as a topping for lasagne or baked gnocchi. Try it and see what you think.

Everybody likes chicken, and this is a special chicken dish with a bush flavour twist. Invite some friends and make it ahead, to cook when they arrive, or just for the two of you. I have chosen thigh fillets because they do not dry out like breast fillet when cooked. Serve it with a green salad and mash, or like I have done with a potato and cherry tomato salad and a drizzle of caramelized lemon myrtle balsamic.
